Feel like having a pizza, but don't want to order and wait for an hour until it arrives? Enjoy your favourite comfort dish and keep up a healthy diet with this super quick version of pizza, using only puff pastry and the ingredients already in your fridge!
Please note: The ingredients we suggest below are merely the ones chosen for the photo below. Feel free to use whatever you have leftover in your fridge (unless it's pineapple, of course-just kidding!) as well as vegan/vegetarian alternatives depending on your preferences or allergens.
Ingredients:
Roll of ready made puff pastry
3 white cap mushrooms, sliced
1/2 courgettte, sliced
2 red peppers, sliced
Sundried tomatoes
Pesto sauce
Passata/Tomato sauce (whatever you have available/prefer!)
Mozarella and feta cheese
Recipe:
Pre heat the oven at 200 degrees Celsius.
Using a rolling pin, even out a roll of ready made puff pastry until it is a suitable thickness and size.
Cover evenly in any sauce you prefer, or multiple. Make sure to leave out around 5-10cm of the edge for a crust.
Chop vegetables into bite sized pieces. Spread chopped vegetables over the pastry, distributing them equally across the different sectors.
Break off your desired cheese(s) and distribute across the pizza.
Place in the oven and bake for 20 minutes.
Once ready, you can also drizzle some olive oil or other garnishes on the top of the pizza. Enjoy!
