Quick and Easy Healthy Banana Pancakes


Who doesn't love pancakes? And now with this super easy recipe only requiring TWO BASE INGREDIENTS via Izy Hossack it will now be even easier and healthier, whilst clearing out your fridge!


Ingredients:

  • 1 (large) banana

  • 2 eggs

Extras:

  • 1/8 tsp baking powder

  • 2 tbsp nut butter

  • 2 tbsp peanut flour

  • 1/4 tsp ground cinnamon

  • 1/4 cup blueberries/raspberries/chopped nuts

  • 2 tbsp mini chocolate chips

Recipe:

  1. Using a blender, peel and then mash up the banana, before stirring in the two eggs. Mix in any other add ins you don't mind being blended in eg. the baking powder, nut butter or peanut flour.

  2. Heat a non stick skillet pan and lightly spray it with oil, turning the heat down to low.

  3. Pour a small circle of batter into the pan-be sure not to make these too large (about 1 tbsp per pancake)

  4. Cook until golden brown on the underside (~1 min), sprinkle on any extra ingredients like blueberries, chocolate chips, nuts etc., then flip over using a thin spatula. Wait another 30 seconds-1 minute until this side is also golden brown.

  5. Serve warm with maple syrup, cream or whatever else you desire on top or on the side!
